When I think of a stubborn character… my mind always drifts to the name Montgomery. I had a friend whose last name was McKinley, etc.
—— My advice would be to go to Babelfish or some translating sites, set the translator to latin, and look up things like ‘ocean’ or a color or something like that, that ties into the story in some way. You can tweak the latin name to make a last name.
Hope this helps! Good Luck!

Building from the aquatic theme:
Shore
Backwater
Sand
Longshore
Current
Dune
Estuarine
Headland
Seawall
Albedo
Benthos
Building from appearance: (she sounds Irish, so)
Walsh
Kelly (’bright-headed)
Byrne (this one’s less appropriate since it means ‘Raven’)
Gallagher (’lover of foreigners’)
Lynch (’mariner’ or ’seafarer’ so probably the most appropriate)
Quinn (noble)
Connolly (’fierce as a hound’ – stubborn)
Keenan (enduring)
